Tried to use the new 'Zaan in the kitchen today, cutting up some vegies and opening soup packets. Real basic stuff.
Got the new-knife jitters. Something just felt wrong, and I ended up switching to the Seb - which, btw, I owned for almost two years before I started to really use it. Something about a knife that takes up your knife budget for the year, maybe. You`ve got to break yourself in before you break the knife in.
Not a great feeling. Wonder if anyone else has this problem.
 
I tend to forget all about how much a knife costs once it arrives and can't wait to give them a spin when I get my hands on them. :D

I do have knives I don't use but they were bought for my collection and were never going to see any use any way.

Used my seby right away. No point to have a knife you dont use imo. Id rather buy some camera glass:)
 
I've heard a piece of advise I wish I would follow.

To make a huge scratch on a new knife. Making it practically worthless for resale, so that you can use it to it's full potential without feeling bad.

Sort of like jumping in a pool, rather than easing yourself in for an hour. The guy or gal who jumps in has much more fun!

Fun is different for all of us. Some people love running through the forest, others like to take their time and see what the forest has to offer. Different strokes for different folks. I personally would not like to put a huge scratch in my knives. Id rather have them get used regularly. Each scar can tell a story then.

On my seb, the first big one came when it fell out of my pants. I thought i lost it and started searching. It fell out of my work truck when i got out and my boss found it and put it on my seat. I was so happy to see it again. Unfortunatly it fell onto gravel and had some pretty deep scratches at the clip end. Now when I see them i dont cringe but remember how close I came to losing my seby:D. I think its kinda cool anyways:)

I'm the same way :D

When I got my first Stainless Damascus sebbie, after ten mins of drooling she was clipped in the pocket. :thumbup: Within a hour she was "working," and within a day she was cutting cardboard.

Nothing wrong with wanting to keep a knife MINT, I just can't :o I like using them more than looking at them... Also does not hurt that I think "used" knives look BETTER than "mint" knives :cool:
