Anyone know the history or purpose of the notch (I have heard it call "Spanish notch') in the end of the blade closest to the handle?

The proper name for it is a choil, also known these days as a sharpening choil. Its purpose is to allow you to sharpen the entire edge by providing clearance between the ricasso and the edge. Otherwise the ricasso (also known as the blade kick on folders) will hit the edge of the stone, leaving a small amount of edge unsharpened. Personally, I find a small dull spot next to the ricasso less annoying than a choil snagging thin materials while I'm trying to make a cut.
