For Breakfast

Kaiser Rolls, Parmesan and Monterey Jack Cheese with Red Raspberry Preserves.

Cut Kaiser Rolls in half and butter the cut sides well. Sprinkle liberally with Parmesan and Monterey Jack Cheese.

Put under broiler until the edges of the rolls are golden brown and cheese is nicely melted.

Serve with Red Raspberry Preserves or the preserves, jam or jelly you prefer, just consider if it will go well with the cheeses though.

Makes for a quick and wonderful breakfast!!!!

We get our Kaiser Rolls from our local Homeland's Bakery. Homeland is the equivelent of Safeway, why they ever changed it in Oklahoma I'll never know.:grumpy:

These came about one morning when we had some garlic/parmesan cheese bread left over. (The Kaiser rolls are excellent for many things, beats hamburger buns all to hell!!!!)
Anyway there's a sweetbread they make at the Homeland Bakery that has sort of a cheese jelly center that I love but can't eat too often because of my weight so I thought these would be similar so I tried 'em with the preserves, They were good.
I got to thinking and got Barb to try the Jack cheese and they were even better.
I'm gonna have to cut back on these as well on account of my weight problem.:grumpy:

We however have taken artistic license with it and changed it from the original. This is one of our favorite meals! It’s also quick and easy too!!!! :D

And a delightful change from the Classic Old Heavy Spaghetti Sauces. The taste always reminds me of Springtime. <VBEG>

Thrown together Fresh Made Spaghetti Sauce.
With a fresh garlic, olive oil, lemon, butter sauce. :D

When at the grocery pick out some nice Roma tomatoes that will quarter into 1-1/4”-1-1/2” sized chunks.

If you like Tomatillos pick out several, eight or more depending how much you like ‘em, that will do the same or small ones you can cut in half.

If you don’t know if you like ‘em try three or four anyway, take our word for it, they are delicious!!!! ;)

Make sure you have one large bulb of garlic, not the Elephant Garlic though. You will need the whole garlic, not just a couple of the cloves.
Pick up a 303 (standard sized) can of diced tomatoes.

Get a couple of Bell Peppers color is up to you, we like them varied so get red, yellow, and green ones when they’re not too expensive.

A package of fresh mushrooms or a can or two of the canned ones.

Either a good-sized onion or a bag of the small onions for boiling that you can cut in two. Green onions work well but not to everyone’s taste.

Chop everything up in 1” or so chunks, you need them fairly large so that everything will cook pretty much evenly. This is similar to a Stir Fry and you don’t want things mushy, just slightly tender or maybe what is called El Dente? :confused:

Some fresh Basil, ground Oregano, and some Italian Seasoning to taste.

Put about two tablespoons of Olive Oil and two tablespoons of Butter, Not Margarine in a large skillet, The Whole Garlic peeled and smushed and chopped, and the juice of 1/2 lemon. Use a “Real” lemon, not the damned stuff that comes in plastic or a bottle!!!!

Put the seasonings in now as well. Don’t let them or the garlic burn or it will be bitter!!!! Barb doesn’t use any salt because of my salt restrictions nor does she use any later. There’s generally enough salt in the canned tomatoes to take care of the need but if you must go ahead.:grumpy: Pepper is always good of course.

Sauté’ everything together except the can of diced tomatoes until almost tender. You want the Tomatillos to keep their shape and not be too mushy.

Then add can of diced tomatoes and let simmer until good and hot, Not Mushy!!!!!!!

Pour it over a pan of freshly cooked spaghetti or even rice. Good Eats!!!! :D

And if you Really Want It Good sprinkle generously with shredded Monterey Jack Cheese.

I was gonna use Larapin but guess it's an old family word with the real meaning lost forever, besides I like learnin new words myself.
I also started to use supereminent but figured it was too easy, and besides Recherché comes up in the thesaurus when supereminent is put in the search block.
