O.T. You liked the Chile Verde! Well try this!!!!

I copied this recipe from the website of our hospital and our health club. It was designed too be heart healthy and low fat but you can substitute a little and have loads of flavor although it isn't as fat free of course.:rolleyes: :D

Beef Enchiladas with Red Sauce


Ingredients:
1 pound 96% lean ground beef or substitute 80% for more flavor.
1 medium onion, chopped
1 package enchilada seasoning
1 can (10 ounces) red enchilada sauce
1 can (10 ounces) green enchilada sauce
1 can (4 ounces) chopped green chiles
12 flour tortillas or corn tortillas. It will take more of the corn since they're smaller. Barb has fixed this both ways and we both much prefer the corn tortillas!!!!
Vegetable oil cooking spray
16 ounces non-fat cheddar cheese or regular cheddar cheese, Barb uses the regular, got to have a little flavor!!!!;)
1 cup non-fat sour cream
1 cup chopped green onions
1 cup picante sauce



Directions:
1. Cook beef and onions until beef in brown and onions are tender. Drain well.
2. Add dry enchilada seasoning to meat and mix well. We do it while the meat and onions are cooking.
3. In a medium bowl, mix red and green sauces and green chiles. Dip tortillas lightly in sauce. You may have to slightly warm the corn tortillas too get them too roll up easier.
4. Spoon 2 tablespoons of beef mixture and 2 tablespoons of cheese in center of each tortilla. Or adjust for the size of the tortilla.
5. Roll up and place seam side down in a 9- x 13-inch baking dish sprayed with vegetable oil cooking spray.
6. Pour enchilada sauce over tortillas and sprinkle with remaining cheese.
7. Bake at 350 degrees for 30 minutes.
8. Top with sour cream, green onions and picante and serve.



Yield:
12 servings, 1 enchilada each

241 calories, 30g carbohydrate, 23g protein, 3.5g fat, 25mg cholesterol

Edit:
Forgot too add you don't need the sour cream and other stuff to make it good. We have discovered the new Pace Green Taco Sauce made with real tomatillos that we really like over them if wanted.:D
 
Looks more like '1 serving, 12 enchiladas each'. (didn't have lunch).

Looks to me like if you eat a few of these you won't need no stinkin' space blanket to keep you warm!

Guaranteed Uwinv, and no begging needed. I could eat that 4-3 times a week meself.;)
Oh yeah, we're considering stopping by for a day or so on our way too Pennsylvania if you will be around when we go. That all right? :)
I wanna see how the mineral oil is holding up protecting the garage floor.:rolleyes:

And Rusty, it's not that hot. The canned green chilis for the most part are wimpy.:D

I know, just giving you advance warning.:D ;) If everything goes all right it will be around the last week of July.:D
 
This one's on the board. Satori modification: some fresh jalapeno slices thrown on...for color, of course. ("If it doesn't hurt, it's bland. If it's too hot to eat, I wasn't hungry enough.") I'm looking forward to it.

Unfortunately, I don't have 12 people to come over to sample it. Fortunately, the two people that will come over will eat 4 each. (Probably more, actually, but I need a few for myself.)

Ought to work out fine...*I* will be in your neck of the woods the third week of June! Got a business trip scheduled out that way...I will try to take a weekend day to add to it for a quick visit at least. (Trying to include a Saturday evening of course!)

Yvsa, I meant to post and thank you for the Chili Verde recipe. I made it and loved it! My wife and son wouldn't try it because it was green! So I got to eat the whole batch. Took me about a week.

Glad you like it Steve! :D Try the enchiladas, since they're red maybe the family will eat them.;)

Uwinv we will call a Sweat in your honor!!!! This year Kathie and Robert decided to have them on the first and second Saturdays of the month, but you know how we are.
Always ready for a Sweat!!!! :D

the corn tortillas are much, much healthier, too :)

we might make this tonight if I can persuade my wife to pick up all the fixins-- i'm home with my sick son at the moment. holding him makes typing difficult ;)
 
These are very good. If you're lazy you can always just mix all the sauce and meat together, put it in a casserole and then put some cut up corn tortillas in it and bake it. Tastes the same just looks different. :rolleyes:
 
Suggestion, if you can get it use La Victoria Enchilada Sauce. It doesn't have that metallic aftertaste of a lot of other sauces. and you can substitute shreaded chicken ( left over roast chicken from the supermarket) for the ground beef. Great recipe
