I copied this recipe from the website of our hospital and our health club. It was designed too be heart healthy and low fat but you can substitute a little and have loads of flavor although it isn't as fat free of course.

Beef Enchiladas with Red Sauce
Ingredients:
1 pound 96% lean ground beef or substitute 80% for more flavor.
1 medium onion, chopped
1 package enchilada seasoning
1 can (10 ounces) red enchilada sauce
1 can (10 ounces) green enchilada sauce
1 can (4 ounces) chopped green chiles
12 flour tortillas or corn tortillas. It will take more of the corn since they're smaller. Barb has fixed this both ways and we both much prefer the corn tortillas!!!!
Vegetable oil cooking spray
16 ounces non-fat cheddar cheese or regular cheddar cheese, Barb uses the regular, got to have a little flavor!!!!
1 cup non-fat sour cream
1 cup chopped green onions
1 cup picante sauce
Directions:
1. Cook beef and onions until beef in brown and onions are tender. Drain well.
2. Add dry enchilada seasoning to meat and mix well. We do it while the meat and onions are cooking.
3. In a medium bowl, mix red and green sauces and green chiles. Dip tortillas lightly in sauce. You may have to slightly warm the corn tortillas too get them too roll up easier.
4. Spoon 2 tablespoons of beef mixture and 2 tablespoons of cheese in center of each tortilla. Or adjust for the size of the tortilla.
5. Roll up and place seam side down in a 9- x 13-inch baking dish sprayed with vegetable oil cooking spray.
6. Pour enchilada sauce over tortillas and sprinkle with remaining cheese.
7. Bake at 350 degrees for 30 minutes.
8. Top with sour cream, green onions and picante and serve.
Yield:
12 servings, 1 enchilada each

Forgot too add you don't need the sour cream and other stuff to make it good. We have discovered the new Pace Green Taco Sauce made with real tomatillos that we really like over them if wanted.
