O1 Steel

I am planning on purchasing some 01 steel for my first knife. But some of the sites say it is annealed and others don't. Do I want 01 that is already annealed or not annealed?

It always comes annealed. Whether it states it or not.
 
Good to know. The other question I see when I go to order is, do I want hot rolled or cold rolled steel. Which do I want?

You want surface ground flat stock.
Generally, hot rolled and cold rolled is mild steel.
 
Your statement is not correct. We have both hot and cold rolled high carbon steel.

OP, why did you choose O1 for your first knife?

Oh, sorry J jolson I stand corrected!
I'm a machinist and I've never seen any hot or cold rolled other than mild steel in the shop. At least not labeled that way.
When it comes to knives though, I personally would go with ground flat stock for the material removal method.

O-1 High Carbon
O-1 is a high carbon, oil hardening tool steel. Popular with custom knife makers it is used both for stock removal and forged knives around the world. With the proper heat treatment it will take and hold a very fine edge while remaining very tough and durable. An ideal high carbon steel for tough edged weapons.
