Observations about sharpening witth Edgepro.

I recently sharpened my SNG with the Apex and got excellent results. The edge is extremely sharp, sharpest blade I've handled to date. One slight problem, if you could call it that, is that the bevel is wider near the curve and tip of the blade as opposed to the blade closer to the pivot. I've also noticed that the bevel altogether is wider than the factory bevel. This may be due to a lesser angle used in sharpening, but I followed the directions with the Apex how to find the appropriate angle. The wider bevel is not unsightly but when I look at my SNG, I get that feeling that I've removed too much metal from the blade. Anybody else run into this.
 
Yeah, if you don't keep the edge in line with the stone, the angle lowers (hence a wider bevel). On the plus side, with the lower angle near the point, the edge has a makeshift distal taper that will cut and pierce better.
 
thombrogan is correct, you have to keep the edge of the blade being sharpened parallel to the blade table. Unless it's a straight blade with no curve ...... you will have to pivot the knife to accomplish this.

I don´t know the SNG but in many knives this has to do with the way it is ground, as the edge gets to the tip it gets closer to the spine where the blade may be thicker, this will happen if the grind doesn´t follow the curve of the belly all the way to the tip. If you keep the same angle all along the edge you may have to remove more steel at the belly and tip and get a wider bevel.

If you look at the blade from the top (i.e from the spine) you may notice that it gets thinner towards the tip, if it doesn´t, then the grind is not following the belly to the tip and you´ll get the wider bevel.
