After watching a mate on one trip, I stopped beheading and gutting larger fish. Just fillet them straightaway and toss head, guts, and spine all in one swoop.
Briggz, I've thought about one of those fillet knives as well.

How does the naked HR hold up in the salt? I'm especially curious about how the little craters (if it has them) hold up. Seth Murdoch thought they'd be little rust factories. I'm hoping it's not really a problem.
