Ok frist time buyer of Edge Pro Apex need some info

just got a used Apex should be on the way soon it has 180 and 220 grit stones. what other stones would you guy's recomend i get for it? this will be my frist Edge pro. also any tips for new guy's on this sharpner?
 
It depends on what you want to do with it and what kind of finish you are looking for.

Did you get the 1200# ceramic steel, the direction book, and the DVD?

If you are sharpening soft kitchen knives like Wusthof's and Henkels, cheapo knives, and maybe even hunting outdoor knives and you want a bit of a toothy edge to start (bite) into tomatoes you may be happy with the 320# followed by the 1200# ceramic steel as a finish.

The EP stones run finer then either Japanese water stones or American sandpaper or whetstones. The 320# EP stone gives the same results as 400# sandpaper or 1000# Japanese water stones if that helps calibrate to anything you are familiar with. The next finer stone is the 600# followed by the 1000#. I would get them both for $14 each. Then there are the glass plates and tapes at 3000# and 7000#. Get them too if you want polished edges.

The 600# EP stone gives the same results as 800# sandpaper or 2000# Japanese water stones.
The 1000# EP stone gives the same results as between 1500# & 2000$ sandpaper or 4000# Japanese water stones. This is the start of a pretty good polish (starting to get a mirror finish). See the stones here: http://edgeproinc.com/productshones.html

I would stay away from the diamond stones unless you need them for ceramic knives. Diamond stones don’t last on some softer steels and the steel grabs the diamonds and pulls them off the plates. The whet stones give a better finish for each grit as well as keep a consistent grit level. The diamond stones get finer as you use them.

All bench stones except diamond on metal plates need to be leveled (lapped). You might also want some silicon carbide, or the leveling kit from EP which is the silicon carbide and a ¼ glass plate, to level you stones as they wear. Get either one from EP (see link below). The 120# stones gets dished fairly quickly if you are doing a lot of reprofiling. It cuts fast and works great though. Bottom of this page http://edgeproinc.com/store/pc/showspecials.asp?pageStyle=M You could also use coarse wet or dry sand paper from an automotive supply store like 120 or 150 grit on a piece of glass to level the stones.

Biggest tip: Use a red or black sharpie and mark the edge between stone changes to keep the angle the same with the next finer stone. Mark the edge before the first stone too if you want to keep the same edge angle you are starting with. The directions and DVD cover this.

good edge on a Busse:eek:

you might want some extra stones, a bottle of your favorite beverage and a full can/pack of tobacco, you will also need to take time for breaks to let some aggression out.

I recommend getting every stone, the edge pro will find work to do, and nothing says SWEET like polished edges.
