Everytime I sharpen a knife I always notice that the second side you sharpen always is faster easier to do than the 1st, the scond side raises the bur much faster and it never seems to angle back as much as the 1st. This is not a problem but just a observation that makes me wonder why? anyone have a coerrect answer? Thanks.

I have the same problem, always thought that it was because I'm a right hander, so the right side is always sharpened harder (deeper).
 
Once you've raised a burr from sharpening the first side, the bevels already meet, so it takes very little effort to raise a burr sharpening the second side. In fact, raising a burr when you sharpen the second side isn't actually necessary; however, it helps keep the edge centered and the bevels equal.
