I have two old blades:
1. Marked "Imperial" with black plastic handle
2. Marked "Japan" with bone-like handle

Question is: what steel these blades are? What is the best way to restore them?

Well "Dima" I think you need to narrow it down a bit more than the description you have provided. I have an "Imperial" knife and I have a knife with bone scales with "Japan" marked on the blade but most likely not the same knives you have. Photos would help!!!

Hi,

Short of metallurgic analysis and no photos, as a general guess. A blade that shows a darkening or staining, or rust, would be a high carbon tool steel of some kind. If it looks used and is still bright and shiny, it's most likely a stainless steel of some kind.

As a WAG, just for fun, sight unseen. Your Imperial could be either carbon steel or stainless. They made blades out of both types. The Japan marked knife, I'd guess is stainless.

Post some photos like babakanoosh45 said. You will better opinions.

Well, both are fixed blades. I don't have photos. Both have some rust, so it is not a stainless.
