Managed to pick one up years ago and really like it. It seems that the chef's knife is no longer in production, as I have only been able to locate a few overpriced used ones.
I am looking for a new knife to add to the collection. I am almost settled on the Fujiwara FKH Gyuto. I really like the shape and carbon steel.

I would really like another OH chef's. Are there any recommendations you might have for a thin blade carbon knife? Price is a factor, and spending $80 for the Fuji is hindering my decision.
