Hi everyone! Here's my modified Old Hickory 7" Butcher's knife. It didn't come very sharp out of the box, so I convexed the edge on my stone and and polished the whole blade with some 600 grit sandpaper. Then I removed the hickory scales and replaced the handle with larger ones I whittled from italian cypress so that it fit better in my (relatively large) hands and my index finger would stop running onto the edge of the blade. Then I saw-toothed about an inch of the spine with my triangle file and serrated the base of the blade with a small round file. I made a simple leather sheathe for it from thick leather scraps, glue, and dental floss. Finally, I gave the blade a coat of turtle wax to keep it dry and rust free :)

Nice.
Dental floss is a good idea. I've got an ancient bobbin of waxed twisted string, and now I'm less worried about what to do when it runs out.
