This is my latest effort, a group of rustic knives made to work.
They are entirely handmade from an Olive Burl of a tree old at least 300 years.

Blade are from 5cm (2") for the necker to 7,5cm (3") for the largest. Very usable, they are made from O2 carbon steel and brass fittings over this gorgeous Olive Burl.

Cheers!

Be careful, in Israel we do not use olive because it cracked. good looking knives:) :)

Mark, olive wood is prone to crack because it a very alive material.
Olive burl is somewhat more stable, but think also that you can use olive wood first because it has a lot of charcater like this.
And also because before using this wood you have to season it a lot.
Once seasoned well and a lot, it is hard to work but it is a pleasure for its richness.

Thanks!
