Greetings!
I've noticed that in traditional european sabre fencing left hand is rested on the left side. The only explanation for this I can see -- this a sight of "fair play" (makes all sorts of grabs impossible). Is there any other reasonn for this?

I believe that is the only reason. In the sport of fencing, commanding the blade (grabbing the opponent's foil with the off hand) is illegal.

It always reminds me of "I'm a little tea pot"
 
Y'all are missing the obvious. Keeping your left hand in the "little tea pot" position (LOL) keeps it from being hit -- in saber, everything above the waist is target area (4 years on my college fencing team).
