Do different grit belts require different SFM's? If so, what is the best SFM for the different grits? Or does it have to do with the material one is grinding?

Work the finer belts, from 120 grit up, at slower speeds. This helps reduce the heat and will give you alot better finish.

actually.....it really depends on what you are doing....I run all the belts fairly fast on metal (I have two machines...one variable speed dc motor and one single speed ac motor) but everything else MUST be slowed down...or it will burn....also...fine belts naturally have more contact area and heat things up faster. If you dont have a variable speed motor.....get one!
