One Edge Question and One Micarta Upkeep Question

My first question is... I just got a Game Warden for EDC and I absolutely love it but if is quite the hair shaving sharp I try to keep my knives at so I am going to sharpen it and I was wondering if I would be better off with keeping it convexed or putting a V grind on it. My EDC tasks consist mostly of cutting soft materials with the occasional hard plastics. I will not be using it for processing it for any wood, I have another knife for that, so I was wondering if there was any advantage to keeping it convexed.

Also I got some oil on an ESEE 3 that I have and it turned the micarta blackish, which doesn't bother me that much because it is a beater, but now every time I use it and my hands get sweaty it oozes oil on them. Is there any way to clean the oil out of them? I figured you guys might know. Thanks for the help.
 
If you are cutting hard plastics I would go with a thicker edge, and not convex. But my opinion and $2.00 will get you a small coffee at Starbucks :-)
 
I'm OCD about keeping Micarta clean. Hot water, dish detergent and a toothbrush.
If that doesn't do the trick I have used bleach with no problems at all.
Just be sure to rinse very well and dry.
 
All of my users are convexed, but for normal touch ups i use an arkansas stone or x- fine diamond to create a small micro bevel. It's a little tougher than a pure convex and no noticeable difference in normal use.
Edit: my convexes are much more acute than from the factory, even on my bigger knives i tace the shoulders off sometimes with a file first, 220 grit, 400 grit and so on.

Try soap and hot water for the handle, for the edge either way will work use whatever method is best for your skills.
 
Addendum question: Is it possible to get a "toothy" edge with a convex grind? And if so how?
