the case slimlock comes to mind, they start at $300 and go up. Check www.casexx.com they have specials sometimes.

The Russlock pattern comes to mind. It has an extended tang for one-hand opening.

Böker makes something with a thumb tab for single handed opening. Traditional look with stainless.
