One I just delivered!

Here is a commissioned knife I just delivery to the happy customer.

This is a 6 1-4" Santoku with 3/32" CPM-154 RC 60 with relief holes in the blade to help keep food from sticking and my pinch grip butterfly.

The relief holes are countersunk by 90 degrees and the handle material is a stabilized Banksia pod from ankromexotics.com

This model of mine slices, dices and chops with a light feel in the hand.
With the holes and the seed pod spots I have nick named it the Holy of Hole lees! LOL :D The customer is very happy and ordered a set of steak knives with Koa wood when I delivered this one. I will post those as soon as they are finished.

Congratulations, Lawrence. Nice looking knife! The Chef market is a tough nut to crack, but it sounds like you're on your way.

I have made mostly culinary for the last 10 or so years. Professional chefs buy a few for home use, but its mostly people that enjoy cooking at home that buy my knives.

The problem with professional chefs is that anything that isn't nail down will disappear out of most commercial kitchens in a heartbeat . LOL!

Laurence, interesting design. It seems like food could get "hung up" when slicing if it gets pushed into the holes. Is this you first one with holes or have you done a bunch like it with good feedback? Just curious.
 
Just checked out your site, and looks like you have made a bunch with holes. Interesting and makes me want to try one with holes :cool:

The holes in the blade near the cutting edge help to lighten and also help to keep cucumbers etc from sticking if you don't get that last piece pushed away by the next cut.

I have a provisional or initial patent on the pinch grip holes for what it's worth? lol. You as a small custom maker are welcome to copy anything I have done.

Bob Loveless himself told me, "Imitation is the most sincere form of flattery. You can copy anything I do except my name".

I didn't invent the idea of the holes along the edge, I borrowed that from a older Japanese Santuko knife I found in a collection. It works great!
Getting all the holes drilled evenly and chamfered is a pain! LOL
 
That is a very interesting looking knife, I like the profile quite a bit. It looks like some very fine work, I'd love to have something like that in my kitchen :thumbup:

I will be having another batch of these profiles water jet cut of this blade out of more CPM-154. I them do all of the bevel grinding and handle work after heat treatment.

Hello, The butterfly pattern by the spine helps with pinch grip and the line of relief holes by the edge help keep food from sticking and lighten things up. Thanks for the nce words.
