the four knives I have right now are a BM 941D2, 806D2, 710HS and a Sebenza

if money isn't a consideration, would you recommend a sharpmaker or an edgepro apex? ease of use is probably more important than anything else...

the edgepro is in a class by itself. however, there is a learning curve and it has some weaknesses, primarily:

(1) blades may get scratched up (taping them up usually solves this issue, but it is not fool-proof) from being rested on the table or from the sludge that may drip on to the table;

(2) I have great difficult doing recurves with it, or maintaining a consistent bevel at the belly (due to my own lack of skill, I am told) - when I sent the blade to Ben for the trial sharpening, he had no such problem.

The sharpmaker, whilst not in the same league, is easy to use and can do recurves. It's chief weaknesses are:

(a) limited edge angle settings (15 and 20 degrees per side only), so you may have to reprofile;

(b) need to be careful not to round off the tip by switching to the flats at the last quarter of an inch near the tip.
