I noticed these butcher style knives, and they look same as classic old hickory knives but have thinner blades and are flat ground.Theyre made out of carbon steel.Im thinking of getting couple of these ones as they look like excellent slicers for kitchen and even all around yard-camp use and also can be easily modified.Anyone have any experience with these?

Yes. I still use my grandfathers set, a hop knife and a slicing/skinner pattern. They are old. Used on his farm to butcher his own animals.

I recently got a 14 inch Old Hickory butcher knife. It is a monster...

Here is a quote from my old thread:

I have had this pair of my grandfathers knives for some time, and don't believe I have posted up photo's.

These are some of the knives that my grandfather used to butcher his cows. My father passed them to me.

There is at least another one or two up at the family fishing place.

I had about 40 lbs of chicken to trim tonight.

I had their paring knife, it was a good one... until the wife accidentally tossed it out.

I have been curious about these hop knives for quite a while. I have a couple of the OH butcher knives, including the 14-inch monster (I think the 14 is the biggest they offer). From what I gather, the thinner hop knife does not adapt quite as well as the 7” butcher knife to camp use, so I think I am pretty well set for now.
A picture of the hop knives would be appreciated, when you get them.

Hop knives, rhubarb knives, cabbage knives, it kind of depends what is being grown in a particular area. In the old days around here I saw all of the above in farm supply stores. And they all looked the same. Plain jane farm work tools.
