Anyone know how this newer model, with stainless steel blade compares to the standard, traditional carbon steel, with regard to ease of sharpening and edge retention?

I am not sure about this newest stainless but I have a carbon steel 7 and an inox 6. The 7 took an edge alot easier and holds pretty well. However, even though it took longer to get sharp, the 6 holds longer IMO.

The carbon is a little easier ti get an edge, but the stainless isnt much harder. Personally I consider them both to be easy to sharpen (Im use to sharpening much harder steels. stropping the opinels is a good way to get a nice edge!! ;)
