The Opinel site states the carbon blades have 0.9% carbon.

Does anyone know the Rc hardness on the Opinel Carbon steel blades?

I'm sorry, jfm. That is not the genuine Opinel site but rather the Opinel Museum site.
The manufacturer's site is at www.opinel.com
I know because I've been exchanging e-mails with Maurice Opinel, the founder's grandson.
The whittled Opinels under "La Légende" are really something else.
