Opinels and Holidays cooking...

I am beating the hell out of my Opinels in stainless and carbon during the holidays,and enjoying it.Cutting up fish with bones,turkey ,ham and everything else.Theyre doing excellent job especially the inox ones!sharpened my inox 10,9,8 and carbon 7 on silicon carbide coarse and medium and they just rip through anything with ease,inox holds better edge without rolling.:) .Will be buying few more soon,slimline models.Any similar experiences?Marry christmas and happy holidays to everyone!
 
Lonestar, I've used Opinels in the kitchen as well. They do a darn fine job. That thin, flexible blade comes in handy for many tasks. If one gets a little dull, a few quick swipes on my ancient EZ Lap Diamond sharpener does the trick.

I'm using a Buck 121 in the kitchen this morning. But now that I've read your post, I might work an Opinel into the line up too....

I give them couple swipes on sharpmaker when theyre dull,and use again.Onde in a while i take out stone and thin the edge out.Edge off the stone is always the best and performs longest.
