I know what you mean about the Striders. The paracord grips are OK for a while, but retying them can be a pain. It is a way to keep the cost down. I was looking at a beautiful Dead Metal dagger that also has that style of grip, and would have bought it by now were it not for that.
I hate to state the obvious, but why not try Dan Koster online here? Check out his profile for his contact information. Dan has done some beautiful handles for his own knives, so coming up with a couple of slabs for each side of the Strider should be an easy task for him.
If Dan is too busy, then try I would try J. Neilsen at http://www.mountainhollow.net/. He has many stabilized exotic materials that he could use to make handles for you. He has everything from giraffe to kudu horn to buffalo horn to burls and many exotic hardwoods of various types and knows what he is doing. You would have the most exotic Strider out there! If you do call J., tell him you heard his name from a post on the HI Cantina, OK? I know he will appreciate that.
