saw it the other day, but couldn't remember who was interested in them.

I was in "Old Knife" (1,000 listings that day)...it was an all-metal chinese cleaver, used extensively, looked like the end of the cutting edge had been sharpened enough so that it slanted up a bit.

Don't have the specific listing.

Good luck.

(Edit: did a search, found it. From a S.F. restaurant supposedly.)

He has two, this is eBay listing # for second one: 6114520403

My wife has one of these which I showed here a long time ago (pics now deleted) so if you want to see more pics let me know...its a light thin cleaver for vegies...

In case the link gets removed....here's the item number: 6114470354

I actually like it....for once, I see a blade that really justifies a solid metal handle. Just be wary of "ancient style"

Any Chinese grocery store has. Mine is soft steel, sharpens easily. Rusts in a heartbeat! Cost: under $10 I recall. Khuk no good for mincing onions...

I use a very light, thin blade, Chinese cleaver for about 95% of my food preparation. I don't know anything about it except that I got it for about three bucks at an Asian market, it's stainless with a wood handle, and holds a super sharp edge. Unless I need to do some special peeling or paring, this is always the knife I reach for.
