Just out of curiousity, which do you think holds a better edge, SAK's or Case SS?

Victorinox SAKs. They take and hold a much better edge than Case's SS.

Although I am a huge Case knife fan and collector.......Wenger wins hands down!
Case is geared more towards collectors with the exception of the CV steel which I like for daily users.

well personally I believe the Victorinox steel is much better than the case, unless you are comapring it to the Case CV.

Im not sure if anyone is aware of this, but the Case CV is what all the older case knives at one time had for their blade steel.
