Great Idea man!
I love these outdoor cooking threads. I may not get in this one. But here is some inspiration for those who might.
This was from a couple of years ago. It actually was my Thanksgiving Turkey?
I called it Operation Dirty Bird,
I was looking to break the rut for Thanksgiving and do something different.
Here is what I came up with,
First the oven,

Pretty easy digging,

OK, oven done,

Getting a fire going,

After a while I moved some into the hole to warm things up a bit,

Part 2,
I knew how to get the bird in the ground, gravity would take care of that. But I wasn't sure how to get it out. At least not without getting if covered in dirt. Here is what I came up with. A piece of old re-rod cut in two and a piece of old fence wire,

I bent the re-rod in the shape of a U, and wired the fence wire to it,

The turkey was stuffed with an apple and sausage stuffing, the outside rubbed with olive oil sprinkled with salt and pepper, wrapped in two layers of cheese cloth. And then two layers of heavy duty foil.
Before it went into the hole, in go some more coals,

In goes the bird, and the rest of the wood and coals go on top,

Now comes the really tough part, fill in the hole with dirt. And have a beverage,

This Thanksgiving Day cooking is really grueling, better have another beverage,

OK, it's time! My extraction device worked really well,


Well, here is the final outcome,

Probably the most moist bird I have ever done. if I had it to do over again, I would have left it in there a tad longer just to brown up the outside a bit more, even the legs were moist and tender. Definitely something I will do again!
