I've never encountered this before? Is it worth for me to make a knife makers membership account if it just a hobby and I'd likely only sell a few a year? I don't quite understand, is there any way to sell without paying? Maybe paying a premium instead on an honor system?

You're not allowed to sell anything here without a paid membership. If you're looking to sell knives you've made, the only membership is knifemaker/craftman/service provider. We have way too many transactions taking place here on a daily basis to depend on the honor system. You're the only one who can decide if it is worth it or not. The membership isn't that expensive but if you're only making a few knives a year it probably isn't.
