Ok just finished cleaning up and throwing the last of the meat in the freezer. Just as a recap the paklite elite boning knife gutted, skinned, quartered, and deboned a deer and was still white copy paper cutting sharp when finished. Never touched the blade as far as sharpening during the process. I'm very impressed with Buck's S30v blade steel and to be honest the skeletonized handle was not my favorite but has started to grow on me I did not mind using it, I would clarify this with for a dedicated knife for this type of work that Open Season boning knife I bet would be very hard to beat with the rosewood handle scales. My only real complaint about the skeletonized handle is when a greater than moderate pressure is needed for a particular cut a handled knife is more comfortable. Splitting the sturnum and some of this meat was partially frozen from being in the freezer since last night made a few of the cuts require heavy pressure. My next purchase for myself will most likely be that Open Season boning knife. For a light weight compact backup knife or for those hardcore individuals that backpack hunt this Paklite Elite set would make a great set of knives. I will I have no doubt be picking up three more sets for my boys because I'm not giving up my set.
