Paring Knife Blank recomendations

Hello all,

First post after being a lurker for a while. I am wondering if any of you have some reccomendations for a Paring Knife/Petty blade kit/blank?

I have been into Japanese kitchen knives for a while now, and have been getting more interested in making my own. So, I thought a good starter project would be to start with a kit, or pre ground blank and add handle materials myself. I would LOVE to start with raw steel, but am currently apartment bound without a dedicated work area for grinders or drill presses. I have a dremel, various hand tools/files and a portable sander that I thought would help.

So, back to the blanks/kits. I was thinking about getting 3 matched (or unmatched for that matter) blanks and doing different handle combos for each (1 for me, 2 for family/christmas). I am hoping for something with decent steel that can take a good edge. Most of the knowledge I have is for a few of the common japanese cutlery steels like VG-10 (I have a nice Hattori Gyuto that I dig, which is made with VG-10). Open to other ideas. Most of the blanks I have seen have been kind of low budget, and have no reference to quality. I'd be open to carbon, but have not seen any in kit form.

I would look at premium knife supply on ebay or their site. they make a large number of 440C blanks, I have bought several with 3 to 4 inch blades that have worked well in the kitchen

I would get a few vintage carbon forgecraft or old hickory from ebay and rehandle them. Almost like a kit.
 
Not exactly the same, but I purchased a large number of "grind limit" boning knives and cut some down for chicken boning and paring knives. For the first time I have a paring knife that I can use - because it has a handle that's large enough to hold.
