I do force it on some blades, just to prevent aggressive rust. I too, am a fan of a natural patina, that is allowed to develop over time, but I am also anti rust, and impatient to boot.
Slice up a gang of lemons, mangos, limes, tomatos, etc. and skip wiping the blade. That will make a great blue colored patina. Almost looks like anodized titanium.
