How do you achieve a nice patina on a carbon tool steel blade? What would you avoid...citrus?

A patina is an items reaction to the environment. By not exposing it to anything, you will get no "patina".
If it is a tool steel blade, cutting anything acidic, like meat, citrus, vegetables, will discolor the blade. Just keep it oiled, and keep rust off of it, and a "patina" will appear, sooner or later.
