Peeling knife-suggestions

My mom picked up a peeling knife at the dollar store and loves the feel and ergonomics of it but wishes it was a better quality knife and asked me to make one. This is where you suggestions will help. Not sure if the blade is called convex but it has the opposite blade profile/shape as a standard knife. I called AKS and got some .078 and .120 AEB L and was considering using the .078 for this knife. Using a filing jig I was going to file the bevels down to leave .020 edge and then send to Peters.

Now would I be better to leave this thin of a blank a bit thicker than .020 and maybe go .030 and just sand the rest in after HT? Also what type of Rockwell should I shoot for......60rc+? Or just let Peters handle it?

Any suggestions would be greatly appreciated. I'll also post a design later today or tomorrow. Maybe I'll make this a WIP thread.

I think .078 may be too thick for a paring knife. Sand it down to 060 to start. Next, call Brad at Peters and ask him how thin the edge can be for HT. He has told me .010 is fine, but that was on a .10 blade. Take as much off as possible before HT, because Rc60-61 is not fun to sand.

Start with .060" stock, profile the blade, and take the edge to an=bout .015". Do the rest after HT.
