Pemmican,,again

Went back to the archives and read a bunch and am wondering how many of you vacuum pack yer stuff. Seems an awsome way to safty many items that you hope you will never need. Pemmican seems to be a perfect food item to keep on hand. That being said, have the archives prompted any of you to make Pemmican? I googled some recipes and wonder too if you all have any favorites?

Pemmican is an easy to make high carb food, especially good for winter treking. It does keep a long time if made right, or turns rancid quickly if made wrong. Combined in a pack with lean smoked jerked meat or fish, a small sack of grain like rice, wheat, oats, corn meal or the like, it can sustain a rather high energy activity. I just jerked a whole deer. And at the rate my kids are plowing through it, the entire effort will be gone by the new year. I need to get at least two more deer, and I will make a bag of pemmican and summer sausage from one. Of course the tenderloins never go into jerky or pemmican. Like crow, it is best eaten fresh!
