Perfect Irish Stew

While making a batch of perfect Irish Stew, I realized, out of all the amazing Busses that I have been blessed with this is the perfect knife. It can do anything any mortal could ever require and much more than most of us can image.
By the way the key to perfect Irish Stew is Smithwick's... It's not available everywhere, you may have to work for it.

Back in my drinking days I used to love Killian's Irish red. Man, this brings back some memories..... and cravings! Bet that Smithwick's is even better!

ETA : I oughtta be more careful, around here, saying things like "Back in my drinking days..." is asking to get kicked out of this sub! 😂

Jerry's probably thinking "What do you even mean back in your drinking days?!?! You mean you stopped?! Why'd you ever do a stupid thing like that?!" 🤣

The first time my wife and I went to Ireland, we got to Dublin way later than we expected. The rental company gave me a brand new, never rented Renault Mégane diesel stick. It was 5:00pm and I was on the north side of Dublin, heading south in a really nice, brand new car that I need to drive from the passenger seat and shift left handed... As the sun set its starting to rain. Our first stop is Killienny (home of Smithwick's)
It was a exciting drive but we made it to the hotel, and walked to the bar ...

Just remember to keep from confusing things it is an ASHBM. They are quite different. Though both are awesome in their own ways.


As for the no choil, I think no choil is the better design, but dang, I just can't get use to it.
 
Better yet, where's the recipe?
1/4 pound thick cut bacon, fried.
2 pounds beef (I like to use thick cut Top sirloin) but any stew meat cut into cubes and pan seared in bacon grease will work.
2 teaspoons salt
1/4 cup olive oil
4 cloves garlic, minced
4 cups beef stock
16oz Smithwick's or Guinness extra stout
1 can tomato paste
1 tablespoon brown sugar
2 sprigs of thyme
1 tablespoon Worcestershire sauce
3 pounds of baby Yukon Gold potatoes, cut in half
1 large onion, chopped
2 carrots, chopped
1/2 teaspoon black pepper
