I was watching a SHOT Show video on YouTube last week (I think LateBoyscout) and saw a clip about Spyderco's line of kitchen knives coming back. I found the plain edge kitchen utility on amazon for a good price, so I ordered one.
I got the knife today and had a chance to try it out a bit. Right away I noticed that the handle was pretty small and thin. It barely fits my hand, and I have average sized hands. The blade steel is very nice, and it came "phone book paper" sharp out of the box. The length of the blade is nice, but the blade profile is very thin, and does not make a good chopping knife. My knuckles were hitting the cutting board unless I had it right at the edge of my counter.
I think this knife would serve very well in the role of a meat carving knife, but that's about it. It does not work well as a "chefs knife" for chopping, dicing etc. I would love to see Spyderco introduce a heavier, proper chefs knife into their kitchen lineup.
