Did some pig hunting today. We drove around the hills with dogs in the back of the ute. It was raining pretty heavily, driving was all on dirt trails and some were pretty rough so we were sliding around a bit. When the dogs jumped out, they had the scent of a pig and were after it - so we jumped out and gave chase. The dogs have GPS collars on and we had a tracker, which is the only way you can find where they've bailed the pig up if they're out of hearing distance. Here's the country we were running through. 30-30 just in case, but we didn't need it. Sorry about the quality of that photo but it's a screen shot of some 'action cam' footage I was taking while we were running.

The pig and the dogs were all down this hole, difficult to get to but my mate got down on his belly and crawled in there.

Me and the pig after we dragged it out. We got two pigs in total - this one and a little one a bit later on which I dispatched after a bit of a chase.

It was a pretty big, healthy-looking sow. My mate butchered her in the tray of the ute. I got three good sized roasts out of it and he got the same - the meat was as good a quality as you'd get from a butcher. I'll have it for dinner tomorrow. Not sure how best to cook it up, any suggestions?

As for the pork, oven roast it, smoke it, slow-cooker, hard to go wrong. Wouldn't know where to start with specific recipes. :pig::thumbup:
 
Thats a good looking pig you bagged. And some good looking dogs. Is your kill dog a pit mix

Not sure, it's my mate's dog. They're great dogs, know exactly what to do, they won't go chasing after anything other than pigs.
 
Looks to be a great time! Thanks for the pictures. Do not know much about Pig hunting, but when I was in Hawaii I was amazed how many Pit Bull Breeds were used for this type of hunting! Thanks again
 
Cook it like a ham. Nice and slow with pineapple slices, juice and brown sugar to baste it with. Then slice it thin. Yummy.
 
Pig hunting with dogs is a blast. Hunting deer with dogs is a lot of fun too.

Grind up some of the meat with beef brisket and spices to make sausage.
 
Baked Pork Roast

One 8- or 10- pound center cut
pork loin roast
1 teaspoon finely crushed
dried mint

4 large cloves garlic
1 cup water or stock
Salt to taste
1 cup dry white wine
Ground cayenne pepper
to taste
1/2 cup finely chopped green
onion tops

preheat oven to 350. Using a sharp knife ( Infi of course), pierce 4 deep holes in the pork and stuff with the garlic. Season the roast with the salt and pepper, and sprinkle with the dried mint and pat it into the meat. Place the roast in a roasting pan with a rack. Mix the water and wine together and pour around the roast. Cover and bake until almost done, about 2 hours, basting occasionally. Sprinkle the green onions all over the top, and cook uncovered until brown.
 
I love carnitas. After trying various recipes, I had found the same one that rcb20000 posted above. It is seriously good. And easy to make. There are even pics posted here by me; search is your friend. Truth be told, I have not bothered with the salsa verde part, as the stuff one can buy at Trader Joes is pretty darn good. But I jsut found a recipe for a chicharrons guisado that starts with a roasted veg salsa verde, so I guess I will be making that.

There are no end of recipes on the webz. The vast majority are simply not very good, having not been tested or simply bland, and not prepared well. There are very few sites that I trust to have really good recipes that actually work. Serious Eats is one of the best. So much content ... check out 'Wobbly Bits' if you like to use the whole animal. Cooks Illustrated is another, but requires a subsrciption.

Thanks for all these great suggestions. I'll read up on the links and try some of the suggestions here for sure (I have three roasts to cook in total). My mate's wife suggests basting it in jam to draw out any gamey taste there might be, and slow roasting in water, so I'll probably give that a go (or tinfoil hat timmy's one with pineapple & brown sugar sounds very good) on one of them. Don't drop it's recipe looks awesome so I'll do that one for sure.

Actually I crawled in first but couldn't get past it's head. It was squealing and snapping at me. My friend started yelling "Be careful they bight! Get out of there, they bight!" He found a way to crawl down a bit to the side of it (there were a lot of logs and roots to squeeze around) where he could get it a bit more safely. Also, you've got to push through four dogs all going crazy, and wombat holes aren't that big!

Agree!!!

...and then they try and kill you again with trichinosis. Cook that pork well and she'll be right.:cool:

Congrat's on the great hunt and thanks for the pics (good to see old Winchester 94's still being used for back-up work)!:thumbup:
