If it is used on acidic food it will discolour like any other carbon steel, but you can just clean it up with some metal polish.

File/sand paper/ patience I also hollow ground the inside of the frame so it would hold the glue.

MMMM, Not much I can add realy.

Hand sanded and polished the blade
Cut the wood a bit thicker than the knife, filed and sanded to a very tight fit, ground the inside of the frame to hollow it out for glue, forced the wood through the hole so it protruded out both sides. Squished it a little in my press, let the glue dry then sanded the wood flush, flooded the wood with super glue, more sanding and polishing.
That's about it.
