Pinning handle...

I am not educated on the various ways of pinning the handle to a blade(fixed blade)...
what are the different ways of doing this and which is the most secure and good looking?

I assume we are talking about full tang knives. The three basic ways would be pins, cutlery rivets (friction hold), and screw-type rivets. Screw-type rivets hold best and mosaic pins generally look best. If you look in one of the knife supply catalogs you will see many different variations of the three types mentioned above.

Most any pin or rivet will hold just fine if the handle is assembled correctly with a good grade of epoxy.
 
Why do pins always show through the slab? Why not use pins that are shorter than the sum of the tang and two slabs and just blind drill the slab? The epoxy provides the tensile strength and the pins would still provide sheer strength. Then finishing the slabs would be easier, right?

They don't always show, some makers do exactly as you described. I like the look of pins myself, and I countersink and peen them for added security. Helps with the paranoia factor.
