Pitting in CPM440V ?

This is just a guess, but I suspect the heat treating. High Chrome CPM steels use a very high Austenitizing temperature (often >2000 degrees). Unless they are done in an atmospherically controlled oven, you may have gotten some decarburization.

I suppose I should have mentioned that I am working this piece from barstock and it hasn't even been heat treated yet.....

Well, unless that is just surface pitting which is not unusual, send it back. If it is surface imperfections, they should be no more than a few thousandths deep.
