I like almost anything based on American home cooking experiences or impressions, so I'm an enthusiast for your approach. The next stage has to be making them affordable to home cooks--and that's quite a challenge.

I can understand where you’re coming from, but I consider custom kitchen cutlery a luxury item and not something to bother with trying to sell to the average household- you’ll sink your own ship trying to please everyone with affordability. I know the value of my hands, time and experience, and that my prices will exclude many doesn’t bother me. “Good knives aren’t cheap, and cheap knives aren’t good”.
