This knife (Wusthof Trident - see Dropbox link below) came with a full set I purchased when my wife and I lived in Germany 34 years ago. I've always assumed it was a pretty standard Chef's Knife (and I still sort of do), but have noticed that the current Wusthof Chef's Knives have a much greater curve to better support a rocking motion. Going through their knives, I actually cannot find this knife, or one like it, as it's flatter than their current list of Chef's Knives (as I can see), and the top of the knife curves down more at the end (which results in said flatter profile). Does anyone have any insight into this knife? Thanks.

I don't see the Wustoff mark. To me, that's a French Sabatier style. Very similar to Japanese gyuto. Designs and models come and go for the big brand houses.

Thank you Eli. Yes, it's a Wusthof Trident. I have all the knives from that same set, and the others do have the mark. This knife has been used and sharpened the most (and played with many years ago by my oldest son when he was a teen ...aaaarrgghh ... ) and so is missing the mark).

All companies change their designs in small ways over the years. Looks like a Wusthof of a few years ago. I haven't paid much attention to how they profile them today.

I purchased it in 1986, so 34 years ago.

What's interesting to me is that Wusthof actually no longer makes a chef's knife with this profile. Their current chef's knives are more rounded to allow for the rocking motion.
