Can anybody tell me what kind of material this is and where I can find it (or make it?)

Mosaic pakawood or some similar material.
You might buy some pre-made , but most make it up themselves by slicing up pakawood or similar laminates and re-gluing it in a new pattern. The 3-D one is simpler than the mosaic one.

I've used the stuff from Woodcraft with good success. Here are a few of the ty pes available, The last two are called Spectra-ply. It comes in many color blends.:
