Please recommend me kitchen knives without plastic parts

So far I have been using Victorinox kitchen knives in my kitchen. As I am trying to get rid of all plastic items I wish to get new knives without plastic handles (or other parts). I wish they would have these features:
1. Corrosive resistant (don't want to have to wipe them directly after each use).
2. Same or better quality than Victorinox
3. Preferable something that got a good price for what you get
4. No plastic parts

I wish to have one bigger knife, one smaller and one peeler. What would you recommend.

EDIT: I want to add that I am located in Europe, so please take into account shipping and taxes when recommending products. This means that often American products might become way too expensive compared to European counter parts.

I recently (about a year ago) invested in some Yaxell Mon series knives. Vg10 steel, g10 handles. No plastic parts. They have done very well. Although they are a bit in the hard side, you don’t want to hit bones etc, as they may chip. But I am very happy with them.

I checked them out and the handles seems to be made out of micarta, which means plastic. The blade seems to be what I would want: VG-10 sandwiched between stainless steel.
 
I have a set of Global knives and like them very much, all metal construction.
They do not seem to have any layers, just one layer stainless steel. I wonder how the blades compare to the much cheaper Opinel kitchen knives set?

If you read, the handles are g10. Which isn’t plastic, nor is micarta. It’s more akin to fiberglass, using different cloths for strength instead of glass. There are many things out there that some may or may not consider “plastic”. Maybe a better description of what you do want would help?

In my definition of plastic I include all fiber reinforced resins. G10 us among the worst plastics as it is (reinforced) epoxy, which contains bisphenol A, which is well known to disturb hormones. I am looking for something that just contains stuff you can find in nature and metal.
 
Thank you all for your suggestions. I bought a set of Opinel kitchen knives. If I am not satisfied with them I will consider Global knives. With current prices one Global knife costs more than the 4 Opinel I bought and they have about the same hardness when looking at the specs.
 
Why not just get the Victorinox with rosewood handles? Pretty much most of their lines are available with Fibrox or rosewood handle.
 
Are you concerned about the epoxy used for attaching the handle?
idk if you are going to find screwed on scales?

Old Hickory line of knives might be your best inexpensive option, but you will need to be mindful of maintenance as they aren't stainless.....
*and they Don't Need to be.
 
WMF Spitzenklasse exists with Olive Wood handles. WMF also has all-steel kitchen knives.
