Spyderco and Benchmade are both good brands. The sebenza is so expensive because of their stringent quality standards. The ritter grip, in my opinion, isn't worth the extra bucks unless you just really need S30V. The Delica is a good low priced choice. S30V and VG10 are good steels.

Well, yeah - but Edge Pro, Lansky, or Sharpmaker?
 
Edge Pro if you like using different angles. Sharpmaker if you are fine with 30% or 40%, or have a lot of karambits and hawkbills.

No, Mtech isn't a good brand, and yes Buck's 420HC is petty decent.
