But I have a question about the manhole cover the knives are on. Is that a manhole cover in Georgia? I don't know much about the manhole cover market, but I'm surprised to see an East Jordan Iron Works cover, made in Michigan's northern Lower Peninsula, showing up so far south.

The manhole cover in your picture has the "original logo" with EAST JORDAN IRON WORKS spelled out. The logo has changed over time through corporate takeovers/acquisitions/expansions. I think the current logo (that I mostly see on cast iron access ports for shut-off valves for water mains) is just the initials EJ next to a globe icon, and the company name may have morphed to "EJ Worldwide".

Just to be more relevant to this thread, here's an example of smooth "smoky gray bone" on a RoseCraft knife I bought in their recent semi-annual seconds sale. It's not Case, and not jigged, but IMHO it's good-looking gray bone that varies from quite dark to quite light depending on ambient lighting.
