Please help, I'm on my 2nd knife and blade is at 1000 grit and handle is at 600 grit. What's first polish or edge. Scared to put edge on blade whats the novice way? Plus I can't find in tutorials. Blade forums is the only way I'm learning plus YouTube. Thank you for reading.

Do every task before putting the final edge on. Working on a sharpened knife is a good way to loose fingers.
If the edge is pre-sharp, tape it up while working the handle.

I have a table drill press, 1 /30 , 4/36 belt sanders harbor freight had to start somewhere and still need a bigger vise, thanks for the advise it makes sence to put edge last I like my fingers.

Yes, please listen to Stacy. Edge is the last thing ya do. If you are talking about a secondary bevel? Then grind that with your 1 x 30. Dip in water a lot and use a light touch. Watch for color change. Don't let it get hot. If ya have a secondary bevel already hit a bench stone at the end. Ya can get a leather belt for your 1x 30 too. Put some green scratch remover on there and just knock the burr off and polish just the very edge of the edge and you'll be happy with the results.
