How far do you go?
Currently I like using Spyderco's Double Stuff while I watch TV etc. but it's only 1200.
I have a King stone that is 6000.
I find that at 1200 it gives me a good edge.
Take the trouble to mirror it?
Or not.

What say the herd?

This one had the following treatment

60 grit ceramic belt
220 grit ceramic belt
15 micron belt
5 micron belt

I'd consider the edge polished. I didn't need to go that far. 220 was popping hairs off. I just did it because I was out of practice and the kids were asleep.
 
I stopped using Shapton #8,000 a long time ago because it takes time to get there (and my OCD kicks in).
I just use a single coarse stone around #240 to obtain hair whittling edge quick (and a strop or a very fine stone for refinement).
 
I'm good with stopping at extra fine diamond, it gives a really nice, toothy edge. However I tend to use my spyderco medium and fine stones as well just because. Not quite mirrored, really sharp.
 
I have the Chosera 3k, 5k and 10k stones for my EP.
I used to go through all the grits up to 10k and finish with polishing tapes. Now I stop at the 1k Shapton and refine the edge with a Spyderco ultra fine about 3 micron. Finish off with 1 micron diamond paste on a horse butt strop..
