Local shop had a used Burger for a good price. It is not used, but is a little shop worn from going in and out of the display case.
I want to use this little, if at all, to maintain its condition.
What can I use to polish it that will not take away from its value? Was hoping to get some fine abrasions off of the metal . Not the blade , but the band of metal between the bone handle and the blade.

I have a Chef's choice power knife sharpener with a diamond fine sharpening slot. Hones a razor edge, double bevel.

I really am new at this. Would this be a good way to sharpen a collectible knife? Maybe not this one, but in the future.

Thanks from the new guy.

Hiya:

If you are concerned with maintaining its condition, thats easy enough, just leave it alone.

If you are out to improve its condition, you will ruin any collectibility it may have had.

This includes sharpening.

Ill bet you enjoy it 100x more if you clean it up with some polishing compound (flitz / peek / autosol etc) Sharpen it up, and use the hell out of it. I'm not familiar with your power sharpener, but if it works, whatever.

Never, ever use a kitchen knife sharpener on a fine knife! Even the Chef's Choice.
Simichrome polish will remove your marks easily.

I should thank you by posting some photos.

It does not seem to be working, however.

The 6 inch ruler is from 1950's-1960's when my father worked as an engineer making televisions. Tube televisions! Sickles Corp in Chicopee Ma. Became General Instrument, part of Zenith.
