polishing maple burl & 01

I have a custom with maple burl handles and an 01 full tang blade. I tried applying a patina and the blade doesn't seem to rust but the tang does. I cleaned up the blade smooth and also the handle with 800 grit wet dry sandpaper. So it's all smooth and clean. iafter putting a patina on the blade and tang with lemon juice and vinegar, the tang seems to rust a bit. I used noxon to take off the dirty patina and it left a nice gray even patina. I then coated the knife and handle in silicone spray and wiped it off. What can I do at home to stop the tang/blade from rust later on and also polish or treat the wood handle. Also, should I treat the leather? I handle fish a lot and get dirt on my other knives so I'd like to protect it until I can get it home n clean it or rinse it in the water with no issue.

I find this funny, since everyone seems to claim that 01 rusts way too easily to be used on a regular basis. I hate these myths about high carbon... I like to use Birchwood Casey Gunstock Wax for both the blade and the handle. Mineral Oil will also do the trick but the gunstock wax lasts longer. The finish is very similar to linseed oil but is much more sturdy, and easier to apply in my opinion. You can use the Gunstock Wax on the leather too! Though I prefer Kiwi Mink Oil.

mine is 15N20, not 01, but it does take a nice patina.
 
It didn rust before i sanded it lol. I think i took off whatever was on there.i wonder if for now i can put s100 wax overtop the silicone sprayed handle.
 
Ren wax or other good quality paste wax will protect the blade and handle.Over the silicone shouldnt be a problem.
